Fluffy Vegan Buttermilk Pancakes

If you don't like the thickest, fluffiest, pancakes out there then this post might not be for you. If this is your preferred type of pancake: Welcome! I absolutely LOVE pancakes but it became rather hard to eat pancakes after switching to a plant-based lifestyle years ago. Almost all pancake mixes have milk in them some even have eggs on the ingredients list. I know many people wouldn't think to check the labels of pancake mix but you might be surprised by what you find.

I was pleasantly surprised to find out just how easy it is to make HOMEMADE PANCAKE MIX! No more scouting the shelves at Trader Joes and Whole Foods trying to find options that fall into my ingredient requirements. Or rather lack of certain ingredients. (Milk & Egg)

1 Cup Flour

1 Tablespoon Baking Powder

A Pinch of Salt

2 Tablespoons Non-Dairy Butter

1 Cup Non-Dairy Milk


  1. Measure out and melt the butter. Set aside

  2. Mix together all dry ingredients (You might need to add more flour at the end)

  3. Whisk in the melted butter to the mixed up dry ingredients

  4. After the melted butter is mixed into the dry ingredients, slowly pour in the milk a little at a time.

  5. Add more flour if the mixture is too thin.

  6. Heat up butter or oil of choice in a skillet on the stove. Pour in pancake mixture and cook until the pancakes are cooked to your desired look and texture.


This recipe is 100% plant-based. It is dairy and egg-free. You can also make it gluten-free by using gluten-free flour.

Note: I use all organic flour and oat milk as my milk of choice.
